Choc Chip Cookies

A Sunday night tucked up in front of the TV with some freshly baked cookies. Just what the doctor ordered. 


Sometimes you just have to take the night off and relax, put your feet up on your new footstool (thanks mum!) and light a few candles. 

These cookies are fab for whipping up in a flash, so whether you have friends round or you plan on demolishing the whole batch yourself (Dan!) then set aside 30minutes and get ready to indulge. 

To make 10 big cookies you'll need:
225g / 8 oz softened butter
140g / 5oz caster sugar
1 egg yolk
2 tsp vanilla extract
225g / 8oz plain flour (don't forget to sift)
pinch of salt
170g / 6oz of chocolate pieces - you can use choc chips, or roughly chopped chunks
55g / 2oz cocoa powder

First off, preheat the oven to 190 degrees / Gas Mark 5 and line two or three baking trays with baking paper.

Put the sugar and butter into a bowl and mix well with a wooden spoon. Once sufficiently blended, add in the egg yolk and vanilla extract. 

Add the pinch of salt to the flour and if you are using cocoa powder then add this at this stage too. Sift the dry mixture to the butter mixture and stir together. 
Add in the chocolate and make sure they're stirred well into the mixture. The last thing you'd want is one cookie with loads and the other with none (unless yours was the one with loads I guess). 

Mould ten balls out of the mixture and space apart on the baking tray.

Bake for 12 - 15 minutes, or until the edges start to turn golden. Leave to rest for five minutes before transferring gently on a wire rack to cool. 

Once cooled, pile them high on a plate and enjoy with a nice cup of something hot! I'm loving baileys hot chocolate right now! 

Now you see why I need to go to the gym so much!
